Salmon slider with lettuce, tomato & avocado aioli


Salmon slider ready to be enjoyed with a classic Mint Julep


With the south’s biggest horse race quickly approaching this Saturday in Churchill Downs, I thought I’d share a recipe perfect for any derby party.  Whether you’re planning to host some friends, go to a party or just want to simply enjoy some food at home for the big race- these Salmon Sliders won’t disappoint!

Salmon Sliders


  • For the Sliders:
  • ½ lb of salmon cut into ¼” inch cubes
  • Juice of half a lemon
  • Zest of half a lemon
  • ¼ cup breadcrumbs
  • 1 & ½ tablespoon chopped red bell pepper
  • 1 tbsp chopped shallot
  • 1 tsp Tobasco sauce (more or less based on what you like)
  • 1 egg white
  • 2 tsp chopped basil
  • Salt & pepper to taste
  • 1 tbsp Vegetable oil for cooking
  • 4 buns/rolls (we used brioche buns but you can use whatever you can find/enjoy)
  • lettuce & tomato for topping
  • For the Avocado Aioli:
  • 1 avocado
  • 3 tbsp plain greek yogurt
  • Juice of half a lime
  • Zest of 1 lime
  • 1 tsp chopped cilantro
  • 1 tsp chopped jalapeño (omit if you don’t like heat, or adjust to your taste)
  • Salt & pepper to taste


  1. For the sliders, combine the first 10 ingredients in a mixing bowl, gently mix with your hands and form 4 small “slider sized” patties. Heat the vegetable oil in a pan to medium-high and sauté 2-3 minutes each side for medium-rare. If you like your fish done more, add 1 minute to each side.
  2. For the aioli, mix the ingredients together and mash up the avocado with a fork to incorporate with the other ingredients.
